Cooking : Kashmiri Tea.

Salaam to you all, I wish you all will be well. Today, I bring a cooking recipe to you all. This one is a easy herbal tea , may you will like it. In Pakistan it is commonly used at wedding ceremonies. Here I have a unique formula to make it.

Traditional Kashmiri Tea.

First, I want to set forth its initiative facts. It is also known as "Shirr  Chai" or "Pink tea". It is a traditional tea beverage, originated from the Kashmir Valleys. It is made with gunpowder tea(green leaves rolled into small balls), milk and baking soda.

I have a new and simple recipe of Kashmiri Tea. I expect you all will like it.

So, let we start...…..

1.Ingredients:

Ingredients.
We are gonna to make 6 cups of Kashmiri tea. For this, we need 2 cup of purified or simple drinking water, 1 cup of cold water, 4 cup of daily use
milk. The main ingredients of tea are 2 inch cinnamon, 5 to 6 star anise, 1 piece of mace and 2 to 3 green cardamom. Instead of gunpowder tea we will use 2 tablespoon  jasmine  green tea. You can also use simple green tea. 1/2 teaspoon of baking soda plays a main and wonderful role in its preparation.

2.Procedure:

Ingredients boiling in water.
Firstly, we will boil the water, then we will add cinnamon, star anise, cardamom, mace and  jasmine green tea. Let, it boil now until 1,1/2  of water will left behind. Now, we will add baking soda instantly it will rise up and will try to come out of pot. We will add cold water promptly. Now, you can compare the color of tea before and after adding the baking soda. Now, let it boil again. When 2 cup remains, filter out the tea.                                                  Preheat the milk, add the filtered tea in it. Let it boil for a while. You can sugar according to your taste. If you wanna thick drink you can add dry milk powder 2 tablespoon per cup.
Adding Milk In Tea.

3.Presentation:

You can serve it simply. But the real and traditional taste is with chopped almonds and pistachios by garnishing on Kashmiri tea.

Baking Soda.

Kashmiri tea is also used in several terms, such as noon chai or gulabi chai. It is traditionally cooked in  samavar. The pinch of baking powder gives it a pronounced pink color. Sugar is not used in Kashmiri home recipes, although newer commercial preparation in restaurants and tea stalls may include sweetener.

I made it with green tea of jasmine flavor, you can use simple one. But don`t use lemon relish tea, because when you will add milk in it, it would convert milk into curd or would may give bitter taste.

Kashmiri tea Formula is also available in packet form in market. If you get that one you can also use that packet instead of spices and green tea.
